Chicken In Designer Beer or Cider
1 large chicken cut into pieces Splash of olive oil 75 cl bottle designer beer or cider 250 g (½lb) mushrooms wiped clean cut off the ends of the stalks 250 g (½lb) smoked bacon chopped into small pieces 2 large onions chopped finely 15 shallots peeled 2 garlic cloves 2 large carrots peeled and chopped 1 stick celery chopped 50 g (2 oz) butter 4 cloves 1 teaspoon cinnamon Salt and pepper to taste 1 sprig thyme (½teaspoon dried) 2 bay leaves
Method 1. Cut the chicken into 6-8 pieces 2. Place the chicken into a large casserole dish with the celery, garlic, carrots, onions, and bacon. 3. Cover with the beer or cider 4. Add cloves, thyme, bay leaves and salt to taste. 5. Cover and leave to marinate for 24 hours.
Next Day 1. Take out the chicken put to the side on a plate. 2. Pass the rest contents of the casserole through a sieve in a bowl, keeping the beer or cider to one side. 3. Put the casserole on a medium heat, add the butter until it foams. 4. Add pieces of chicken to the casserole fry for about 10 minutes or until golden. 5. Add the rest of the reserved contents of the casserole and fry with the chicken for another 5 minutes. 6. Pour over the reserved beer or cider, place a lid on the casserole. 7. Bring contents to the boil and reduce heat, and simmer for about 1½hours or until chicken runs clear when pierced with a skewer at its thickest part.
